Easy Peasy Christmas Cake
1KG mixed dried fruit (Check out The Source or Good For store for a lovely one)
2C instant black coffee (Or can swap coffee for Orange Juice)
2C self-raising flour
150g dark fruit and nut chocolate - chopped
Mix the dried fruit and coffee in a large bowl, then cover and soak overnight.
The next day, pre-heat oven to 180C.
Coat a 20 x 28 cm pan and oil with olive oil. Line the base with baking paper.
Mix together the fruit mixture, chocolate, and flour.
Spoon into the pan and bake for 2 hours, or until cooked.
This cake can be stored in an airtight container in a cool, dark, dry place for up to a month.
