Pumpkin & almond Loaf


  • 400 grams pumpkin

  • 4 eggs

  • ½ C olive oil

  • 300 grams almond meal

  • 2 teaspoons baking powder

  • pinch salt

  • pinch ground nutmeg

  • 2 tablespoons Pumpkin Seeds



  1. Preheat oven to 160C.  Line a loaf tin with baking paper.

  2. Grate the pumpkin in a bowl.

  3. Add eggs and olive oil and mix to combine.

  4. Add almond meal, baking powder, salt and nutmeg and until combined.

  5. Spoon the mixture into the loaf tin and sprinkle with pumpkin seeds.  Place loaf into oven.

  6. After 1 hour, insert a skewer into the middle of the loaf to see if it is still gooey.  If it doesn't come out clean, continue cooking for another 15-25 minutes.
